Cabernet Sauvignon

IGT Cabernet Sauvignon: perfect for meat dishes, but it is a wine that cries out for roast lamb, preferably with a few sprigs of thyme and rosemary to remind it of home.

Vinification

The grapes were handpicked before being crushed and destemmed. Throughout fermentation, temperature was kept at 24°C to preserve the primary fruit flavours. Pumpovers and maceration were conducted in such a manner as to optimize the extraction of soft full tannins with elegant concentration. The blend was aged for a further six months before being lightly filtered and bottled.

Tasting Notes

Colour: A deep, dark red with purple tinges

Nose: Cherries, blackcurrants and spices with oak vanilla notes.

Palate: Rich plum and cassis with oak spices; intense tannins and an elegant finish.

Cellaring: Drinking well now. It can be kept for up to 5 years.
